Easy ANZAC biscuit recipe
RECIPE
ANZAC biscuits are all fairly similar, but there are some notable differences. Some are soft and fluffy, with a more cake-like texture, others are chewy and yet still others are crunchy and crispy. This super easy recipe for ANZAC biscuits errs somewhere in the middle with a nice chewy softness but a crispy exterior. Best eaten fresh out of the oven while they’re still warm – they truly feel like a warm, golden hug to your tastebuds.

Easy ANZAC biscuits
PREP: 10 mins | COOK: 10-12 mins 
DIFFICULTY: Easy | MAKES: 10-12
Ingredients:
1 cup whole oats
1 cup dessicated coconut
1 cup plain flour
1 cup brown sugar
Pinch of salt
150g butter
2 tbsp golden syrup
1/2 tsp baking soda
Method:
- In a large mixing bowl combine oats, coconut, flour, sugar and salt. 
- Melt butter and golden syrup in a saucepan over medium heat, then add baking soda, remove from heat and stir together. Pour into the dry ingredients and mix. 
- Roll large tablespoons tightly, compacting the mix with your hands. Place 3-4 cm apart, and flatten slightly on a lined tray. Bake at 160ºC fan-forced for 10-12 minutes, until golden brown. 
Note: Cook for around 10 minutes for softer cookies, and 12-15 minutes for crispy and crunchy.
